First 3-D dynamic virtual mouth provides insights for developing healthier foods

This week, scientists presented the world’s first dynamic virtual mouth in Melbourne. They believe that the new mastication model will provide a better understanding of how food is digested at a microscopic level and how it influences our taste receptors, in order to help the food industry develop salt-, sugar- and fat-reduced foods without compromising their taste.
